From the ground up.

Last November, I was approached by a couple of people with hopes of investing into my vision. Needless to say, it didn’t quite work out…

Two months later, a similar proposition was made, but I kept quiet for fear of it never coming to fruition. I’m now confident enough to announce that in the coming spring, I will be moving to Lasalle County, IL to develop a small-scale, organic farm. The goal will be to build, from the ground up,  a restaurant that will be sustained for the most part by what we grow and raise. We aim to be open to the public by February 2014.

The food will be far from the average farm-to-table restaurant. We will honor innovation as we always have— Remembering the importance of pushing forward.

This entire journey will be recorded by Aric Jackson, a cinematographer from Chicago, IL, in addition to Pouya Asadi’s prior footage, for a full-length documentary.

    Henry County, just down the road, is hog capital of the Midwest. In Princeton every year, they have Pork Days. No shortage of local food to find there.
